The first half of January was filled with two retreats; one in Beaufort, NC and one in Abingdon, VA. Witnessing the transformation in the women who attended both of these retreats was a true honor. I got to see participants settle into a flow of winter nourishment and also deepening connections through Ayurveda, yoga, introspection, creativity, and sisterhood. Wow!!

Thanks to all of you who showed up for these retreats to get 2024 off to an amazing start!

For the rest of this month, until January 31st, the doors to my year-long program, the Vitality Circle, are open. We are welcoming in the next cohort of women who are ready to take a deep dive into this transformational journey!

ps- I want to share a little taste (literally) of what deeper seasonal nourishment can feel like. Here is a recipe that our amazing chef, Isabel, from the Beaufort retreat made for us that I just loved (and have made twice since my return home). Sweet potatoes are grounding for the cold, windy days, chickpeas provide some balancing for the dampness starting to set in as we approach February, spinach is clearing for the tissues, and the spices all help to support a balanced digestive fire. Enjoy

 

Sweet potato & Chickpea Stew

1 can or 1.5 cups cooked chickpeas 

1 large sweet potato 

1 can coconut milk 

2 large handfuls baby spinach 

1 medium onion , diced 

2 cloves garlic, crushed 

1 tsp cumin seed 

2 tsp fresh ginger, grated 

2 tsp ground coriander 

0.5 tsp turmeric powder 

1 tsp salt Freshly ground black pepper 

1 or 2 Serrano chilies (optional) 

1 Tbs coconut oil 

 

In a heavy pan or instant pot heat coconut oil, add whole cumin seeds and stir until they start to pop and become fragrant. Add onion and sauté until soft and a little golden, add garlic and ginger and soften, add turmeric, coriander, salt and pepper, stir for 30 seconds. If you like a little spice add 1 or 2 Serrano chilies, sliced lengthways and stir. Add coconut milk and stir again. Add chickpeas and diced sweet potato. Simmer on stove until sweet potatoes are soft 15-20 mins or bring instant pot to high pressure for 4 minutes. Quick pressure release. Before serving remove chilies and stir in spinach to wilt. Serve with basmati rice
