Apple Pancakes!

October is here!
It's apple season, and it is important to nourish ourselves with the seasonal fruits and vegetables that fortify us as we come together to heal the systemic traumas of our times.
I believe in the power of ancient wisdom to support our wellbeing. I don't claim to have the answers for the masses, but I do believe that connecting with each other and honoring our very human experiences is a great starting place. Ayurveda gives us the wisdom and tools that create a framework for our life rhythms. These rhythms become essential when we are triggered, feel loss of hope, or cannot make sense of the world around us. This is exactly why I am feeling called to offer more in-person workshops (let me know if you have a connection to a place that would like to host me in 2027!).
For now, here is a simple, yet nourishing (and grain free) seasonal pancake recipe that I hope you will enjoy and perhaps make for a friend.
Apple Pancake (1 serving)
1 egg
2 Tbsp shredded apple
3 Tbsp ground flaxseeds
1 tsp maple syrup (optional)
2 Tbsp filtered water
1/8 -1/2 tsp. cinnamon
Whisk the egg, apple, flaxseeds and maple syrup together.
Lightly coat a pan with ghee and heat over medium heat.
Pour the pancake mixture into the pan and cook until the bottom of the flax cake is solid enough to flip, 3-4 minutes. Cook the other side until done, about 1 minute.
Sprinkle with cinnamon and serve.
May the sweetness of Autumn fruit and the abundance offered from the Earth at this time remind us of the potential we humans have to live with deep nourishment, gratitude, and ease with one another and the planet.
